Fluffy Cottage Cheese Pancakes (High-Protein & Naturally Sweetened)

 

If you’ve never added cottage cheese to your pancakes before, get ready to be amazed. These pancakes are soft, fluffy, and lightly sweet — with a rich, custardy texture that tastes like a cross between pancakes and cheesecake. They’re naturally high in protein and a perfect make-ahead breakfast for busy mornings.

This recipe makes about 15–18 pancakes and comes together in just 20 minutes start to finish!

  • 2 cups cottage cheese (blend first if you prefer a smoother texture)

  • 4 pasture-raised eggs

  • 1 tsp vanilla extract

  • 3 tbsp maple syrup

  • 1 tsp baking powder

  • 1¼ cups all-purpose flour

  • ¼ cup avocado oil (feel free to use less or omit if desired)

  1. Mix the batter:
    In a large bowl, combine all ingredients. Stir well to mix everything together.

    Tip: If you don’t like the curds in cottage cheese, blend it before adding to the batter for a smoother consistency.

  2. Cook the pancakes:
    Heat a nonstick pan (or lightly oiled skillet) over medium heat. Pour in small amounts of batter — about ¼ cup per pancake.
    If you want perfectly round pancakes, you can use muffin rings — just remember to spray them well!

  3. Flip & finish:
    Cook until bubbles form on the surface and edges start to set (about 3 minutes). Flip and cook another 2–3 minutes, until golden brown.

  4. Serve & enjoy:
    Stack your pancakes high and top with butter, syrup, or honey. (I love using honey when I’m out of maple syrup — it adds a warm, floral sweetness.)

Store any leftovers in an airtight container in the fridge for up to 4 days.

Sausage Egg Casserole

Sausage Egg Casserole 

Assemble the ingredients the night before, and bake this casserole in the morning.

Ingredients:
3/4 pound sound sausage.  (We like Jimmy Dean Hot)
1 tablespoon butter
4 green onions, chopped
1/2 pound fresh mushrooms, sliced
10 eggs beaten
1 (16 ounces) container low-fat cottage cheese
1 pound Monterey jack cheese, shredded
2 (4 ounce) cans diced green chile peppers, drained


1 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
1/3 cup butter, Melted

Directions:
  1. Place sausage in a large, deep skillet.  Cook over medium-high heat until evenly brown.  Drain and set aside.  Melt butter in skillet, and cook and stir the green onions and mushrooms until tender.
  2. In a large bowl, mix the eggs, cottage cheese, Monterey Jack cheese, and chiles.  Stir in the sausage, green onions, and mushrooms.  Cover, and refrigerate overnight.
  3. Preheat oven to 350 degrees.  Lightly grease a 9x13inch baking dish.
  4. In a bowl, sift together the flour, baking powder, and salt.  Blend in the melted butter. Stir the flour mixture into the egg mixture.  Pour into prepared baking dish.
  5. Bake 40 to 50 minutes in the preheated oven, or until lightly brown.  Let stand 10 minutes before serving.

Egg & Cheese Hash Brown Waffles

Ingredients

  • 1 20-ounce package Shredded Hash Browns
  • 3 eggs
  • 1/4 cup milk
  • 1 cup shredded sharp Cheddar Cheese
  • Salt & pepper
  • Sour cream for serving, if desired

Instructions

  • Heat waffle iron on the medium-high setting. Spray each side generously with non-stick cooking spray or brush with melted butter.
  • In a medium-sized mixing bowl, whisk together eggs and milk. Stir in potatoes, cheese, chives and season with 1/2 teaspoon salt and 1/4 teaspoon pepper.
  • Depending on the size of your waffle iron, scoop a layer of the potato mixture onto the surface (for the round waffle maker, I used about 1 cup of the mixture). Spread to about 1/2 inch from the edges and close the waffle iron. Cook for about 5 minutes, checking every few minutes to avoid burning. When the entire waffle is golden brown in color, carefully remove from the waffle iron with a fork or tongs.
  • *Tip: Turn your oven to the "warm" function and place finished waffles on a baking sheet in the oven to keep warm which the rest are cooking.
My kids love these.  We have even added bacon

Cinnamon Syrup

Ingredients
1 cup sugar
1/8 teaspoon salt
2 tablespoons flour
1/2 teaspoon cinnamon
2/3 cup water
2 tablespoons butter

Directions


  1. Mix sugar, salt, flour, and cinnamon in a small saucepan.
  2. Add water and bring to a boil.
  3. Boil until thickenend.
  4. Stir in butter.
  5. Serve over pancakes, waffles, or french toast.

German Pancakes

6 eggs
1 c Milk
1 c flour
1/2 c sugar
1 t Vanilla
1/2 t Salt
1/4 c butter

Melt butter in a large baking sheet that has a rim around it, in the oven as you preheat to 350.  Put eggs in blender and blend until frothy.  Add milk, flour, sugar,vanilla and; blend again.  Remove melted butter from oven and pour egg mixture into pan over butter.  Bake at 375 for 10 - 15 minutes. Cut into squares and serve with powdered sugar, syrup, or jam.

These are one of my kids favorite breakfast.  Enjoy!

Vanilla Dutch Baby (German Pancake)

The baked oatmeal may be my favorite, but this is my husband, Anthony's favorite.  Actually, I love it just as much.  I love that it is so easy too.  Mix it up in the blender and stick it in the oven.  No need to stand by a griddle, flipping pancakes.  My favorite way to eat this is with powdered sugar or lemon curd, but Anthony prefers syrup.  I adapted this recipe from the Food Network and A Hint of Honey.  (You can also half this recipe and cook it in a oven-safe skillet.)

4 tablespoons butter 
4 eggs
1 cup all-purpose flour (I often use half whole wheat flour.)
1 cup milk, heated about 30 seconds in the microwave
1 tablespoon plus 1 teaspoon sugar
1 tablespoon vanilla extract
Pinch salt
Dash of cinnamon and nutmeg

Directions
Preheat the oven to 425 degrees F.

Place the butter in a 9x13 pan and place in the oven to melt.

Meanwhile, in a blender, combine the remaining ingredients, and blend on medium-high speed until uniform.

Carefully, remove the hot pan from the oven. The butter should be melted. Swirl the butter around the pan to coat completely, and then pour the remaining butter into the batter and whisk to blend. Pour the batter into the hot pan and return the pan to the oven. Cook the pancake for around 15 minutes, or until the pancake is puffed in the center, and golden brown along the edges.


Apple Cinnamon Baked Oatmeal

This is currently one of my favorite breakfasts!  We all love it, including my picky toddler!  Leftovers reheat great too.  I have never been a huge fan of oatmeal... but baked oatmeal is another story.  So many recipes have a lot of sugar and butter, but this one is pretty healthy.  I found this recipe at Two Peas and Their Pod.


Apple Cinnamon Baked Oatmeal


Yield: Serves 4-6
Cook Time: 20 minutes (It takes 30 minutes for me.)

Ingredients:

2 cups old fashioned oats
1/4 cup light brown sugar
1 1/2 teaspoons cinnamon
1 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups milk  (I only use about 1 cup, so it cooks faster.)
1/2 cup applesauce
1 tablespoon melted butter
2 egg whites (I use 1 whole egg.)
1 teaspoon vanilla
1 large Granny Smith apple, peeled, cored, and diced

Optional Toppings:  (I never add any of these.)
Brown Sugar
Raisins
Dried Cranberries
Chopped almonds

Directions:

1. Preheat oven to 350 degrees F. Coat an 8 by 8 baking dish with cooking spray and set aside. (I use a 7x11 pan. I have also doubled it and fit it in a 9x13 pan.)
2. In a large bowl, combine oats, brown sugar, cinnamon, baking powder, and salt.
3. In a medium bowl, whisk together milk, applesauce, butter, egg whites, and vanilla. Pour wet ingredients over dry ingredients and stir until combined. Gently stir in diced apples. Pour oatmeal mixture into prepared pan.
4. Bake for 20 minutes (I always cook mine for 30 minutes, and even longer if I double it.) or until oatmeal is golden brown and set. Remove from oven and serve warm. Add additional toppings to baked oatmeal, if desired.  (We just add milk to our individual bowls, and that is it.)

Healthy Applesauce Oatmeal Muffins

These are currently our favorite healthy muffin!  I have made them too many times to count, and we all love them.  They are delicious... and healthy.  They freeze wonderfully.  I often stick them in the freezer, and then my husband Anthony can grab a couple and take them to work for a quick breakfast. I also found these at Mel's Kitchen Cafe.

Ingredients
  • 1 cup rolled/old-fashioned oats
  • 1 cup unsweetened applesauce
  • 1/2 cup milk
  • 1 large egg
  • 1 teaspoon vanilla
  • 4 tablespoons butter or coconut oil, melted (I have tried it with both, and we love both.  When I use coconut oil, I use extra virgin coconut oil, and it give the muffins a slight coconut taste.)
  • 1/3 cup sugar
  • 3/4 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup dried cranberries or raisins, optional (I have never added them.)
Directions
  1. Preheat the oven to 375 degrees F. Line a 12-cup muffin tin with liners or grease the muffin cups. Set aside..
  2. In a medium bowl, stir together the oatmeal, applesauce, milk, egg, vanilla, butter and sugar. Set aside.
  3. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon and salt (and cranberries or raisins if using). Make a well in the center and pour in the applesauce mixture. Stir until just combined (Don't overmix or the muffins will be dense and dry). The muffin batter texture might be a bit different than other muffin batters.
  4. Distribute the batter evenly among the 12 muffin cups. Bake for 15-20 minutes until a toothpick inserted in the center comes out clean. Don't overbake or the muffins will be dry.

The Best Ever Pumpkin Pancakes

2 1/2 cups flour
4 tbsp sugar
4 tsp baking powder
1 tsp cinamon
1 tsp ground ginger
1 tsp salt
1/4 tsp nut meg
2 cups milk
12 tbsp pumpkin puree
4 tbsp melted butter
2 eggs

Blend milk, pumpkin, butter and egg together.  Add in all of the dry ingredients and mix thoroughly.  Heat griddle to 400 degrees and be sure to spray.  Cook for 2 minutes on each side making sure to check them so they don't burn. 

Syrup
1 cup butter
2 cups sugar
2 cups butter milk (milk will work fine too)
2 tbsp vanilla
2 tbsp corn syrup
1 tsp baking soda

In a Large pan bring first 5 ingredients to a boil, mixing the whole time with a whisk.  Add the baking soda and boil for 10 seconds (Beware, the syrup will bubble and if you're not careful it will boil over onto the stove) remove and serve with pancakes.

Banana Bread Pancakes



Ingredients

Instructions

  1. In a large bowl, combine flour, baking soda, salt, brown sugar, white sugar and cinnamon and stir to evenly combine dry ingredients.
  2. Add buttermilk and vanilla to dry ingredients and stir until combined.
  3. Add in mashed bananas and mix to evenly incorporate.
  4. Add butter and stir until smooth.
  5. Heat griddle to medium heat.
  6. Spray griddle (or skillet) with cooking spray and pour pancakes onto griddle (about 1/4-1/3 cup). Cook about 2 minutes or until pancake starts to bubble, then flip to other side and cook until other side is golden (about 2 more minutes).

I have been looking for a good recipie for banana pancakes and this is it.  So good.  My 10 year old daughter made them all by herself and all of us where going crazy how good they where.  Hope you enjoy them.

Breakfast Pizza

Ingredients
  • 1 pkg. Johnsonville breakfast sausage patties
  • 1 pkg. (8) refrigerated crescent rolls
  • 1 cup frozen loose pack cubed hash brown potatoes, thawed (I put in the refrigerator and let thaw overnight)
  • 1 cup shredded cheddar cheese
  • 5 eggs
  • 1/4 cup milk
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 2 Tbsp. grated Parmesan cheese (I use Kraft)
Instructions
  • Cook sausage until well browned, drain fat. Break it up as you cook it so it is like ground sausage.
  • Press crescent roll dough into a 9 x 12 cookie sheet or an ungreased 12 inch pizza pan with points toward the center. Press over bottom and up sides to form a crust; seal perforations (important) Spoon sausage over the crust.
  • Sprinkle with potatoes and top with cheddar cheese. (You can make it to this point the night ahead of time, cover with plastic and refrigerate)
  • In a bowl beat together eggs, milk, salt and pepper.
  • Pour over crust in the middle – it will seep out to the edges on its own. If you pour it near the edges it may overflow.
  • Sprinkle with Parmesan cheese over all.
  • Bake at 375 oven for 25-30 minutes.

Glazed Doughnut Muffins

These muffins were delicious!  They really did remind me of a doughnut!  I found this recipe at My Baking Addiction, and she adapted them from a King Arthur Flour recipe.

For the Batter
1/4 cup butter
1/4 cup vegetable oil
1/2 cup granulated sugar
1/3 cup brown sugar
2 large eggs
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
3/4 to 1 ¼ teaspoons ground nutmeg, to taste (I used ¾)
1 teaspoon cinnamon
3/4 teaspoon salt
1 teaspoon vanilla extract
2 2/3 cups all-purpose flour
1 cup milk
For the Glaze
3 tablespoons butter; melted
1 cup confectioners’ sugar; sifted
3/4 teaspoon vanilla
2 tablespoons hot water

Directions
1) Preheat the oven to 425°F. Lightly grease a standard muffin tin. Or line with 12 paper muffin cups, and grease the cups with non-stick vegetable oil spray; this will ensure that they peel off the muffins nicely.
2) In a medium-sized mixing bowl, cream together the butter, vegetable oil, and sugars till smooth.
3) Add the eggs, beating to combine.
4) Stir in the baking powder, baking soda, nutmeg, cinnamon, salt, and vanilla.
5) Stir the flour into the butter mixture alternately with the milk, beginning and ending with the flour and making sure everything is thoroughly combined.
6) Spoon the batter evenly into the prepared pan, filling the cups nearly full.
7) Bake the muffins for 15 to 17 minutes, or until they’re a pale golden brown and a cake tester inserted into the middle of one of the center muffins comes out clean.
8.) In a medium bowl, prepare the glaze by mixing together the melted butter, confectioners’ sugar, vanilla and water. Whisk until smooth.
9.) When muffins have cooled slightly, dip the muffin crown into the glaze and allow the glaze to harden. Then dip them a second time.
10.) Serve warm, or cool on a rack and wrap airtight. Muffins will keep at room temperature for about a day.

Easy Potato & Bacon Breakfast Casserole


I make this for Christmas breakfast at my house and my family all loves it!
Easy Potato and Bacon Breakfast CasseroleRecipe by Our Best Bites
4 c. Southern/country-style hash browns (cubes), completely thawed (if they’re not thawed, they won’t cook correctly)
1 12-oz. package bacon
1 1/2 c. pepper jack cheese
1 1/2 c. cheddar cheese
1 bunch green onions, chopped
3 eggs
1 c. milk*
about 1/2 tsp. kosher salt
about 10 turns freshly ground black pepper
*For high altitudes, reduce milk to 2/3 cup and sautรฉ the potatoes in rendered bacon grease until partially cooked before baking.
Begin cooking bacon.  While the bacon is cooking, place the potatoes in a 9×13″ baking dish. Mix the cheeses together and sprinkle it over the potatoes. When the bacon is done cooking, drain it on a paper towel and reserve 2 tablespoons of the drippings. Cook the onions in the drippings for 2-3 minutes or until they’re tender and fragrant. Spread the onions over the cheese mixture and then sprinkle everything with the crumbled bacon.  Whisk together the eggs, milk, salt, and pepper and, whisking constantly, pour the egg mixture evenly over the potato mixture.  Cover and refrigerate overnight or for 7-8 hours.
When ready to bake, preheat the oven to 350.  Bake, uncovered, for 40-45 minutes or until the cheese is bubbly but not brown. Allow to stand for 15 minutes before cutting. Serve with fresh fruit.

Whole Wheat Buttermilk Pancakes

Breakfast food is typically my fall back for dinner. It is what I make when I need to go to the store of have little time to make dinner. I try to make breakfast foods that are at least somewhat healthier, so I often use whole wheat, especially at dinner time. Our Best Bites has yet to fail me, so I decided to try their whole wheat pancake recipe. We loved it--even Anthony. It might be one of our favorites now. They were tender and fluffy with just a hint of whole wheat. So good. The link is here. It is adapted from Cooking Light, another trustworthy source.

3/4 C whole wheat flour
3/4 C all-purpose flour
3 Tbs sugar
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1/2 tsp salt
1 1/2 C low-fat buttermilk *
1 tsp vanilla extract
1 Tbs canola oil
1 large egg
1 large egg white
Cooking Spray or butter for pan

*As a substitute for 1 C buttermilk, place 1 Tbs lemon juice (or vinegar b) in a 1 C measuring cup and then fill the remainder with milk. This recipe calls for 1 1/2 C buttermilk, so do the same thing with 1/2 Tbs lemon juice and remaining 1/2 C milk.

Combine flours, sugar, baking powder, baking soda, and salt in a mixing bowl and whisk together. In a separate bowl combine buttermilk, eggs, oil, and vanilla and whisk well. Add the wet ingredients into the dry and mix just until moistened and combined.

Heat a nonstick griddle or skillet to medium heat. Coat pan with non-stick spray or a little butter and then pour on pancake batter. Use about 1/4 C batter for large pancakes (5-6″) and 2 T for kid-sized ones (2 /2-3″). Wait until bubbles form and edges are set and then flip.

Makes 12 large or 24 small pancakes.


Freezer Instructions: These pancakes freeze wonderfully. Just lay out pancakes in a single layer on a baking sheet or other pan. Freeze until solid and then place in a zip-lock bag. To serve, just warm up in the microwave or toaster.

Baked Oatmeal

This was a quick tasty breakfast! I found the recipe at ourbestbites.com, but the original recipe comes from allrecipes.com.

3 c. oats (not quick-cooking)
3/4 c. brown sugar (I might decrease this next time.)
1 tsp. salt
2 tsp. cinnamon
2 tsp. baking powder
3/4 c. Craisins, raisins, dried cherries, or other dried fruit (Optional--I omitted this.)
1 c. milk
1/2 c. butter, melted (I substituted applesauce for 1/4 c. of the butter.)
2 tsp. vanilla
2 eggs

Preheat oven to 350. In a large bowl, combine the oats, brown sugar, cinnamon, baking powder, salt, and Craisins. In a smaller bowl, mix together the milk, butter, vanilla, and eggs. Add the liquid mixture to the dry mixture and whisk to combine. Pour into an 8×8″ or 9×9″ baking dish. Bake for 40 minutes or until the top is golden brown. Serve immediately with a splash of warmed milk.

*Yummy Granola*

This is the Maple Syrup I used! Wal-Mart sells it.
Step 1 *Mix the following Ingredients in Large Bowl then set aside:
3 Cups Oatmeal-Big Oats
1 Cup Coconut
1/4 Cup + 2 Tbsp. Brown Sugar
1 Cup Pecans or Walnuts

Step 2 *Maple Topping.
3/4 tsp salt
1/4 Cup + 2 Tbsp Real Maple Syrup
1/4 Cup Oil
*Stir until like a thick Carmel*Pour over oat mixture and mix until everything is well coated*Pour into greased cookie sheet*
*Cook 1 hour to 1hour & 15 minutes until a nice golden brown @ 250 degrees* You need to stir every 15 minutes!

This is so Delicious! I got this from my mother, who got it from some magazine. It is like eating dessert! Serve it over vanilla yogurt, milk, or my favorite, vanilla ice cream. You will want to double this because it will be gone before you know it and you'll be wishing you had more!!! Enjoy!

Pumpkin Waffles

These waffles are delicious, particularly if you serve them with buttermilk syrup (aka Ebleskiver syrup)! I have also used 1/2 whole wheat flour with good success.

Ingredients:
2 1/2c flour
1/3c packed brown sugar
1 Tbsp cinnamon
1 tsp ginger
1/4tsp cloves
1/2tsp salt
2 1/4tsp baking powder
1 tsp baking soda
2c buttermilk
1c pumpkin puree
6 Tbsp canola oil
4 eggs, separated

Directions:
Sift together flour, sugar, spices, salt, baking powder, and baking soda. Set aside. Combine buttermilk and pumpkin. Stir in canola oil and egg yolks. In a large, clean glass or metal bowl, beat egg whites with a hand mixer or beater until you have stiff peaks (meaning that when you lift the beater out of the bowl, the mixture stays pointy. As in a peak. That is stiff.)

Stir dry ingredients into pumpkin mixture till just combined. Fold in egg whites. Cook waffles in waffle iron according to manufacturer's directions.

Aeblskiver

2 C flour
1 tsp baking powder
1 tsp soda
1 tsp salt 2 Tbsp sugar
2 C buttermilk
3 egg yolks
3 egg whites
1 Aeblskiver pan (cast iron muffin pan w/ handle)

Beat egg whites till stiff. Mix flour, baking powder, soda, salt and sugar. Mix buttermilk and egg yolks. Add to dry ingredients. Fold in egg whites. Place Aeblskiver pan over medium-low heat; add butter to each cup. Fill each cup about ¾ full. Turn with a toothpick. Turn them several times to make sure they are done in center.

Syurp:
½ C buttermilk
1 C butter
1 C sugar
½ tsp soda
½ tsp vanilla

Mix together and boil 5 minutes. Add vanilla after is has boiled 5 minutes.

This is one of our family's favorite breakfasts.

Everyday Waffles

1 ¾ C flour
3 tsp baking powder
½ tsp salt
2 beaten egg yolks
1 ¾ C milk
½ c cooking oil
2 stiffly beaten egg whites

Beat egg whites and set aside. Combine dry ingredients. Combine yolks, mil and oil; stir into dry ingredients. Fold in whites. Bake in waffle iron.

Buttermilk waffles: Substitute 2 C buttermilk for sweet milk. Add ½ tsp soda and reduce baking powder to 2 tsp. Continue as above.

Buttermilk Pancakes

1 egg
1 c. buttermilk
2Tbsp. melted butter

Mix the preceding ingredients together well.
Add:
1 c. flour
1/2 tsp salt
1/2 tsp soda
3/4 tsp. baking powder
1 Tbsp. sugar

Add more buttermilk or milk for thinner dough.

My sister made these over thanksgiving weekend and they are the best pancakes ever.
We topped them with apple pie filling that we canned and whip cream. So So So Good.
