Lazy Cookie Cake


  • 1 box yellow or white cake mix
  • 2 eggs beaten
  • 5 tablespoons melted butter
  • 2 cups minin chocolate chips
  • mix together
  • put in a greased 9x13 pan and bake at 350 for 20 mins

Smores Fudge Bars

makes 25 bars
Ingredients
Crust
  • 2 cups graham cracker crumbs
  • ½ cup butter, melted
  • ¼ cup granulated sugar
  • ½ tsp salt
Fudge layer
  • 2 cups milk chocolate chips
  • 14 oz sweetened condensed milk
Fluff Layer
  • ¾ cup sugar
  • ½ cup light corn syrup
  • ¼ cup water
  • ¼ tsp salt
  • 2 egg whites
  • ¼ tsp cream of tartar
  • 1½ tsp vanilla extract
Instructions
  1. Preheat oven to 350°
  2. Line a 9x9 baking pan with foil. Set aside.
  3. Mix all the ingredients for your crust together and press evenly into pan.
  4. Bake for 10 minutes. Remove from oven and set aside.
  5. Next make your chocolate filling. In a medium sauce pan combine the milk chocolate and sweetened condense milk together over medium-low heat and stir until melted. Pour immediately onto crust.
Fluff
  1. Combine sugar, corn syrup, water and salt in a small saucepan over medium-high heat. Boil together until a candy thermometer reads 240°.
  2. While mixture is boiling beat 2 egg whites and cream of tartar together until soft peaks form.
  3. When syrup is ready, turn mixer onto low and drizzle the syrup along the side of the bowl slowly combining it into the egg whites.
  4. When all the syrup has been added turn mixer up to medium high and beat for 7-8 minutes until thick and glossy. When there is about one minute left add in the vanilla.
  5. Spread about 1½ - 2 cups of the Fluff on top of the chocolate layer.
  6. Turn oven onto broil and place pan under broiler for 1 minute or until the top of the marshmallow layer gets lightly golden.
  7. Cut into squares when ready to serve.
Notes
Store bars airtight at room temperature for up to 2 days or refrigerated for up to 5 days.

Store the remaining Fluff at in an airtight container, refrigerated for up to 2 weeks.

Pumpkin Cheesecake Bites

Ingredients:
1 15-oz can pumpkin
3 eggs
1/2 cup brown sugar
2 tbsp cream
1 tsp vanilla extract
1/2 cup granulated sugar
1 tbsp cornstarch
1 1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ginger
1/2 tsp salt
1.5 lbs cream cheese, at room temperature
for graham cracker crust:
18 graham crackers (2 sleeves)
1 stick butter, melted
1/4 cup sugar
*whipped cream to top
Directions:
Preheat your oven to 400 degrees.
In a large bowl crush graham crackers with your hands. Add sugar and butter and mix well. Press graham cracker crumbs onto a lined (parchment paper or silpat) jelly roll pan. Bake for 5 minutes until toasty. Remove and reduce oven temperature to 325.
Mix together the pumpkin, eggs, brown sugar, cream and vanilla in a large bowl.
In the bowl of a KitchenAid, beat together the cream cheese, granulated sugar, cornstarch, cinnamon, nutmeg, salt and ginger. Beat until light and fluffy then slowly pour in pumpkin mixture. Continue beating until mixture is smooth and no lumps remain.
Pour batter onto baked crust and bake for 50 minutes until edges begin to pull away from the sides of the pan. Let cool completely before cutting into small squares and topping with whipped cream.

Salted Golden Caramel Bars



Ingredients

  • Vegetable oil , for greasing dishes
  • 8 cup(s) puffed rice cereal
  • 3/4 cup(s) corn syrup
  • 2/3 cup(s) sweetened condensed milk
  • 1/2 cup(s) packed light brown sugar
  • 1/4 cup(s) granulated sugar
  • 4 tablespoon(s) unsalted butter
  • 1 teaspoon(s) sea salt
  • 1 1/2 teaspoon(s) vanilla extract
  • 1/4 cup(s) dark chocolate chips, melted

Directions
  1. Liberally oil a large mixing bowl and a 9-by-13-inch baking dish. Place cereal in bowl and set it and dish aside.
  2. In a medium saucepan over medium-high heat, combine corn syrup, condensed milk, sugars, butter, and sea salt. Allow mixture to come to a boil, while stirring continuously, until a light golden brown, 5 to 6 minutes.
  3. Remove mixture from heat, stir in vanilla, and immediately pour over cereal. Stir to completely mix, and then evenly spread in prepared baking pan.
  4. Set aside to let cool, about 45 minutes. Invert and release from pan. Drizzle with melted chocolate and refrigerate until set, about 15 minutes. Cut into 15 bars.

Cookie Bars

Ingredients
  • 1/2 c. butter
  • 1 1/2 c. crushed graham cracker crumbs
  • 1 can condensed milk (Eagle Brand)
  • 1 c. coconut flakes
  • 1 c. chocolate chips
  • 1 c. chopped almonds
Instructions
  • Melt butter in microwave then pour into a 9x9 square pan. Sprinkle graham cracker crumbs over butter. Evenly pour the condensed milk over the crumbs. Then sprinkle on the coconut, chocolate chips, and nuts. Bake at 350 for 25 to 30 minutes. Let pan completely cool before removing bars.

Frozen Strawberries and Cream Dessert

  • 4 graham cracker sheets
  • ½ cup pecans
  • 10 tablespoons butter
  • 1 cup flour
  • ⅓ cup brown sugar
  • 2 egg whites
  • ½ cup sugar
  • 1 cup heavy whipping cream
  • Juice from 1 lemon
  • 4 ounce cream cheese, softened
  • 2 cups coarsely chopped strawberries
Instructions
  1. Preheat oven to 325 and prepare a 9×13 by spraying with cooking spray. Set aside.
  2. In a food processor, combine graham crackers and pecans until finely ground.
  3. Melt butter and combine with crumbs, flour, and brown sugar.
  4. Spread mixture in the bottom of a parchment lined pan and cook for 20 minutes, stirring halfway.
  5. Take out the crumb mixture and let cool.
  6. In a kitchenaid, or using a hand mixer, beat egg whites and sugar on medium speed for 3 minutes. Add heavy cream and mix for 6 minutes.
  7. Add juice from one lemon and cream cheese and mix until creamy.
  8. Gently fold in chopped strawberries.
  9. Press half of the crumb mixture into the bottom of your 9×13 pan. Spread strawberries and cream mixture on top and sprinkle the rest of your crumb mixture on top.
  10. Cover with aluminum foil and freeze for at least 3 hours but best if overnight. I also found that if you let it sit out 10 minutes before cutting it is easier to remove the bars.

Peanut Butter Chocolate Chip Brownies


Peanut Butter Chocolate Chip Brownies
1 1/2 cups all purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
6 Tablespoons butter, softened
1/2 cup peanut butter
2/3 cup sugar
2/3 cup packed brown sugar
3 eggs
1 teaspoon vanilla
1 cup semi-sweet chocolate chips
  • Preheat oven to 350 degrees and grease an 8 X 8 pan.
  • In a medium bowl, stir the flour, baking powder and salt together with a wire whisk and set aside.
  • In a mixer, cream the butter and peanut butter until smooth. Add the sugars and mix until combined.
  • Add the eggs and vanilla and mix until combined.
  • Add the dry ingredients and mix on low until combined.
  • Stir in the chocolate chips.
  • Spread in the pan and bake for 30-35 minutes or until done.
Notes: I baked these for 32 minutes but they really needed a few more for the center to be completely done. So to avoid the top turning too brown, place a sheet of aluminum over the pan about halfway through baking. Or you could bake them in a 9 X 13 inch pan for a few minutes less and get more brownies too.
Frosting
1/2 cup semi-sweet chocolate chips
1/2 cup peanut butter
1/2 cup butter, softened
2 cups confectioner’s sugar, sifted
Milk
  • Melt the chocolate in the microwave in 30 second intervals until smooth.
  • Stir in the peanut butter until completely combined and set aside.
  • In a mixer, beat the butter until smooth.
  • Add the sugar and mix until combined.
  • Add the chocolate and peanut butter mixture and mix until completely blended.
  • You can add a teaspoon at a time of milk if you would like the frosting creamier.
  • When the brownies are cool, spread the frosting on top.

School Lunch Peanut Butter Bars


These are a good little treat that my kids love I found the recipe here.

School Lunch Peanut Butter Bars
1 1/2 C Flour
1¼ tsp. Salt
½ tsp. Baking Soda
¾ C Butter
¾ C Sugar
¾ C Brown Sugar
1 ½ tsp. Vanilla
1 1/2 C Creamy Peanut Butter (split)
2 Eggs
1 ½ C Quick Oats
Frosting:
½ C Butter (1 stick)
3 ½ C Powdered Sugar
2 T Cocoa
¼ C Milk (I use whatever I have in the fridge)
1 tsp. Vanilla
Preheat oven to 350 degrees. In a small mixing bowl, mix together flour, baking soda and salt. In a large mixing bowl, cream together butter, sugars, 3/4 C peanut butter, eggs and vanilla until light and fluffy. Gradually add dry ingredients, just until incorporated. Then, stir in the oats. Spread onto a greased 11 x 15 Jelly Roll Pan (cookie sheet). Bake for 12-15 minutes, or until golden brown. Cool for 10 minutes.

The frosting is a two step process. First, whip the remaning ¾ C Creamy Peanut Butter until it becomes lighter colored and fluffy. Carefully spread the whipped peanut butter over the pan cookie.

Then, add butter to a small sauce pan and melt the butter. Add the milk and cocoa. Cook over medium heat, stirring constantly. Heat just until boiling. Remove from heat and add vanilla. Then, gradually add the powdered sugar. Stir until thickened. Pour over the peanut butter and gently spread over the cookie. Cool completely, and slice into bar cookies.

No Bake Chocolate Chip Granola Bars (and a variation)

I have tried a couple recipes for homemade granola bars recently.  They beat store bought granola bars any day!  Both are adaptations of a Rachael Ray recipe. 

No Bake Chocolate Chip Granola Bars
via Mels Kitchen Cafe and Lauren's Latest
Ingredients:
1/4 c butter
1/4 cup honey
1/4 cup packed brown sugar
2 cups quick cooking oats {not rolled oats!}
1 cup crispy rice cereal
1/2 teaspoon vanilla
1/4 c chocolate chips

Directions:
In a large bowl, stir oats and rice cereal together. Set aside. In a small pot, melt butter, honey and brown sugar together over medium high heat until it comes to a bubble. Reduce the heat and cook 2 minutes. Pour in vanilla and stir. Pour over dry ingredients and mix well to moisten all ingredients. Pour into lightly greased small jelly roll pan {about 12x8x1} and press out to be about 3/4 inch in thickness. {If your pan isn’t small enough, pack the mixture into one side. You really want to press them down so they stick together.} Sprinkle with mini chocolate chips and press down lightly. Cool on a countertop to room temperature for two hours or until the chocolate chips are set before cutting into bars. Wrap in parchment or plastic wrap and store at room temperature.
Recipe Notes: If your granola bars don’t seem to be staying together when you cut them, you may have made them too thin or you didn’t pack them in tight enough. Stick them in the fridge for 20 minutes and that should help keep them together. {Be sure not to keep them in there too long or else they’ll become super hard!} The next time you make them, try reducing the butter to 3 tablespoons and really packing them down.

No Bake Peanut Butter Pretzel Chocolate Chip Granola Bars
via Two Peas and Their Pod
Ingredients
1/4 cup butter
1/4 cup brown sugar
1/4 cup honey
1/4 cup creamy peanut butter
1 teaspoon vanilla extract
2 cups quick oats
1/2 cup crispy rice cereal
3/4 cup chopped pretzels
1/4 cup mini chocolate chips

Directions:

1. Cut out an 8 x 8 inch square of parchment paper. Place the parchment paper in the bottom of an 8 x 8 inch baking pan.
2. In a large sauce pan, add butter, brown sugar, honey and peanut butter. Heat over medium-low heat, stirring occasionally until the mixture starts to bubble. Once bubbling, cook for 2 minutes while stirring. Remove from heat and stir in the vanilla extract.
3. Stir in the oats, crispy cereal, and pretzels. Stir until well coated. Pour into the prepared pan. Press the mixture evenly into the pan. Sprinkle the mini chocolate chips over the top and gently press into the granola bars with your hands.
4. Place the bars in the refrigerator and let cool for at least 30 minutes before cutting. Cut into bars and serve.

Chocolate Chip Cookie Dough Cheesecake Squares

These were delicious, and I will definitely be made again, especially since my sweet tooth is back! I saw this recipe on several blogs. The original recipe is from The Essential Chocolate Chip Cookbook.

Crust
1 & 1/2 cups graham cracker crumbs
5 tablespoons unsalted butter, melted
2/3 cup miniature semisweet chocolate chips (I didn't have mini, so I used regular sized.)

Preheat oven to 325°F. Butter a 9″-square baking pan. Line pan with parchment paper, leaving enough to extend over the sides. Butter the parchment paper. (I did not use parchment paper, and I had no problems.)

Combine graham cracker crumbs and butter until crumbs are moistened. Stir in chocolate chips. Press crust mixture into bottom of pan. Bake for 6 minutes. Set pan on wire rack to cool.

Cookie Dough
5 tablespoons unsalted butter, at room temperature
1/3 cup packed light brown sugar
3 tablespoons granulated sugar
1/8 teaspoon salt
1 teaspoon vanilla extract
3/4 cup all-purpose flour
1 cup semisweet chocolate chips

Using an electric mixer, mix butter, brown sugar, sugar, salt, and vanilla extract at medium speed until smooth. Decrease mixer speed to low and add flour. Mix just until incorporated. Stir in chocolate chips. Set aside.

Filling
10 ounces cream cheese, at room temperature
1/4 cup granulated sugar
1 large egg, at room temperature
1 teaspoon vanilla extract

Using an electric mixer, beat cream cheese and sugar just until smooth. Add egg and vanilla extract, beating just until blended. Pour batter into baked crust. Drop cookie dough by teaspoonfuls over the top of the filling.

Bake about 30-35 minutes, or until set. Transfer to wire rack.

(I totally forgot about the chocolate topping... they were just fine without it. I am sure it would make it extra delicious.)
For chocolate topping, melt 1/3 cup semisweet chocolate chips in a double boiler or in the microwave. (Tip: put the chocolate chips into a zipper bag and heat on 50% power for a few minutes. Cut the corner off the bag and squeeze the bag to make drizzling less messy). Use a teaspoon to drizzle chocolate over top of bars. Cool bars in pan completely, about an hour. (Stick the bars in the freezer for 5 minutes to set quickly if you're in a hurry).

Using the edges of the parchment paper, remove bars from pan. Cut into bars (clean the knife after each cut) and serve.

S'mores Bars

1/2 cup butter, room temperature
1/4 cup brown sugar
1/2 cup sugar
1 large egg
1 tsp vanilla extract
1 1/3 cups all purpose flour
3/4 cup graham cracker crumbs
1 tsp baking powder
1/4 tsp salt
2 king-sized Hershey's milk chocolate bars (if you want a more subtle chocolate flavor use regular sized chocolate bars; enough to fit)
1 1/2 cups marshmallow creme/fluff (7 1/2 oz jar)

Directions:
1. Preheat oven to 350°F. Grease an 8-inch square baking pan.

2. In a large bowl, cream together butter and sugar until light. Beat in egg and vanilla. In a small bowl, whisk together flour, graham cracker crumbs, baking powder and salt. Add to butter mixture and mix at a low speed until combined.

3. Divide dough in half and press half of dough into an even layer on the bottom of the prepared pan. Place chocolate bars over dough. 2 king-sized Hershey’s bars should fit perfectly side by side, but break the chocolate (if necessary) to get it to fit in a single layer no more than 1/4 inch thick. Spread chocolate with marshmallow creme or fluff. Place remaining dough in a single layer on top of the fluff. This part can be tricky. I made little disks with the dough and placed them on top. Spread it around gently.

4. Bake for 30 to 35 minutes, until lightly browned. Cool completely before cutting into bars.
Makes 16 cookie bars.

Creamy Lemon Crumb Squares

These were a light and tasty treat that definitely hit the spot. I will definitely be making these again. I think I would prefer these over the typical lemon bar. This recipe originally came from the Pioneer Woman. You could replace the lemons with limes, and they would turn out equally delicious.

1-⅓ cup All-purpose Flour
½ teaspoons Salt
1 teaspoon Baking Powder
1 stick (1/2 Cup) Butter, Slightly Softened
1 cup Brown Sugar (lightly Packed)
1 cup Oats
1 can (14 Ounce) Sweetened Condensed Milk
½ cups Lemon Juice
Zest Of 1 Lemon

PREHEAT OVEN TO 350 DEGREES.

Mix butter and brown sugar until well combined.

Sift together flour, salt, and baking powder.

Add oats and flour to butter/sugar mixture and mix to combine.

Press half of crumb mixture into the bottom of an 8 x 11 inch pan.

Mix together condensed milk, lemon juice, and lemon zest. Spread onto the bottom layer of the crumb mixture. Top with the other half of the crumb mixture, but don’t press.

Bake for 20 to 25 minutes, or until golden brown.

Allow pan to sit on counter for 30 minutes after baking. Cut into squares and refrigerate for a couple of hours or until cool.

Serve cool.

Oatmeal Butterscotch Bars

These were so good. These have both browned butter and butterscotch chips, making them quite tasty. The oatmeal gave them a light and chewy texture. They did not last long. Be careful--they are definitely addictive.

*Makes 18-24 bars

Bars:
1 1/4 cups all-purpose flour
2 cups quick-cooking oatmeal
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup butterscotch chips
16 tablespoons (2 sticks) butter
1 cup packed dark brown sugar
1 large egg
2 teaspoons vanilla extract

Glaze:
1/4 cup butterscotch chips
2 tablespoons dark brown sugar
1 tablespoon water
1/8 teaspoon salt

Preheat the oven to 350 degrees and adjust an oven rack to the middle position. Line a 9X13-inch baking pan with aluminum foil, letting the foil hang over the each short edge by one or two inches. Lightly grease the foil with cooking spray.

In a medium bowl, whisk together the flour, oats, baking soda, and salt. Place the 3/4 cup butterscotch chips in a large bowl. In a small saucepan, melt the butter over medium heat and let the butter cook until golden brown in color, about 10 minutes, taking care not to burn. Pour the hot butter over the butterscotch chips and whisk together until melted and smooth. Whisk in the brown sugar until combined. Whisk in the egg and vanilla. STir in the lfour mixture, just until incorporated.

Scrape the batter into the prepared pan and smooth the top, spreading the batter evenly to the edges. Bake the bars until a toothpick inserted into the center comes out with just a few moist crumbs, about 16-18 minutes.

While the bars bake, place the 1/4 cup butterscotch chips, brown sugar, water and salt in a small microwave-safe bowl. Microwave the mixture until melted and smooth, about 2 minutes on 50% power. Whisk to combine well.

Drizzle the glaze over the warm bars. Let the bars cool completely in the pan. Remove the bars from the pan using the foil overhang and cut into squares. Serve.

Peanut Butter Bars


  • Ingredients

  • 1 cup butter or margarine, melted

  • 2 cups graham cracker crumbs

  • 2 cups confectioners' sugar

  • 1 cup peanut butter

  • 1 1/2 cups semisweet chocolate chips

  • 4 tablespoons peanut butter



  • Directions: 1. In a medium bowl, mix together the butter or margarine, graham cracker crumbs, confectioners' sugar, and 1 cup peanut butter until well blended. Press evenly into the bottom of an ungreased 9x13 inch pan. 2. In a metal bowl over simmering water, or in the microwave, melt the chocolate chips with the peanut butter, stirring occasionally until smooth. Spread over the prepared crust. Refrigerate for at least one hour before cutting into squares.

Sugar Cookie Bars

A nice alternative to sugar cookies but without all the work. These were delish and super easy! I found these here and here.

1 cup butter, room temperature
2 cups sugar
4 eggs
2 tsp vanilla
5 cups flour
1 tsp salt
1/2 tsp baking soda
1 tsp lemon zest (optional)

Cream butter and sugar until fluffy. Add eggs, one at a time, mixing after each egg. Add vanilla and mix well. In a separate bowl combine flour, salt, baking soda and stir with a whisk to combine. Add to wet mixture and mix just until combined. Spread on a greased baking sheet (use a 13 x 18 pan). Bake at 375 degrees for 10-15 min, until light golden brown or until a toothpick comes out clean (they won't look done so do the toothpick test). Cool completely and frost.

Cream Cheese Frosting
1/2 cup butter, room temperature
4 ounces cream cheese (1/2 of an 8 oz block) softened
1 tsp vanilla (or almond extract)
¼ tsp salt
4 cups powdered sugar
5 Tbsp milk
food coloring (if desired)

For frosting combine butter and cream cheese until smooth and creamy. Add vanilla and salt. Add powdered sugar in 1-2 cup increments until combined, then add milk a little at a time and mix until smooth and spreading consistency. You may not need all the milk. Spread over cooled cookie bars.
*You can also double the butter (1 cup) and omit the cream cheese.

Oatmeal Brownie Gems

2 3/4 cups quick-cooking or old-fashioned oats, uncooked
1 cup all-purpose flour
1 cup firmly packed light brown sugar
1 cup coarsely chopped walnut
1 teaspoon baking soda
1 cup butter or margarine, melted
1 3/4 "M&M's" Semi-Sweet Chocolate mini Baking bits
1 package fudge brownie mix, prepared according to package directions for fudge-like brownies

Preheat oven to 350. In large bowl combine oats, flour, sugar, nuts and baking soda; add butter until mixture forms coarse crumbs. Stir in "M&M's" until evenly distributed. Reserve 3 cups mixture. Pat remaining mixture onto bottom of 15x10x1-inch pan to form crust. Pour prepared brownie mix over crust, carefully spreading into brownie mixture; pat down lightly. Bake 25 to 30 minutes or until toothpick inserted in center comes out with moist crumbs. Cool completely. Cut into bars. Store in tightly covered container.
Makes 48 bars
