2 Carrots- cut in pieces
1 Lg green pepper- cut in pieces
1 Lg onion- cut in pieces
2 Tbs tapioca
4 Boned chicken breast- cut in chunks
1 Lg can pineapple chunks- undrained
1/3 c. brown sugar
1/3 c. red wine vinegar
1 Tbs. soy sauce
1 tsp. chicken bouillon
1/2 tsp garlic powder
1/2 ginger
10 leaves fresh cilantro (opt)
Place vegetables in bottom of crock pot. Sprinkle tapioca over veggies. Place chicken atop veggies. Combine all other ingredients and pour over chicken and veggies cover crock pot and cook on Low 8 hrs. Before serving make white or brown rice. Serve Sweet and Sour Chicken over the fluffy rice.
