Avocado Meat Loaf


2 pounds ground beef
¾ cup diced celery
½ cup chopped green onion
1 Tbsp parsley
½ cup green bell pepper
1 can (8 ounces) Tomato sauce
1 cup dry breadcrumbs
1 ½ to 2 cups chopped fresh mushrooms
1 egg, beaten
1 large avocado, skinned and diced
1 tsp. celery salt
½ tsp. pepper
1 Tbsp. Paprika

Preheat oven to 350

Ina Large bowl, combine all ingredients except paprika, and mix well. Press meat mixture into a greased loaf pan. Sprinkle paprika over meat loaf. Bake 90 minutes, or until no loner pink in the middle. Makes 6-8 servings.
